A 1:1 hot water extraction means the finely milled fruiting body is extracted for 3 hours at 90 to 100 degrees C, then evaporated and spray dried. Nothing from the original mushroom is discarded. Two species, not eight or twelve. We use Lion's Mane and Turkey Tail because they are the two with the strongest published research behind them, and we put them in at amounts we are willing to print on the label.
The Coffee
The beans come from Caranavi, Bolivia, in the Yungas region. Yungas means "warm valley" in Aymara. They grow at 1,600 meters above sea level in the tropical valleys of the Andes.
At that altitude the cherries develop slowly. Strong Andean sun by day, cold mountain winds by night. That tension forces the cherry to ripen with greater density, higher natural sugar content, and a citrus forward flavor complexity that lower altitude beans cannot replicate.
These are not commodity beans from a broker. They were selected personally through cuppings in Bolivia, against a specific flavor architecture: red cherry, citrus, and a cacao finish. Cup score 85 to 87. Enough character to stand completely alone as exceptional coffee, and refined enough to pair with functional mushroom extracts without either one fighting the other.
The coffee is roasted in small batches in Denver by Kevin, our roaster. It is ground and portioned into each bag.
The Extracts
Lion's Mane (Hericium erinaceus)
Full spectrum 1:1 fruiting body extract. Contains compounds studied for nerve growth factor support. Supports cognitive function. We never quantify individual compounds like erinacines at specific milligram figures because the measured amounts are trace quantities. We claim the full spectrum instead, because that is what the research actually supports.
Turkey Tail (Trametes versicolor)
Full spectrum 1:1 fruiting body extract. Supports immune function. Supports gut health and a healthy microbiota. Turkey Tail is one of the most studied functional mushrooms in human clinical trials.
Both extracts are sourced from our USDA Certified Organic fruiting body extract supplier. We do not name the supplier in our copy. We let the COA speak.
How to Brew
We source and roast with deep care. The rest is yours.
General ratio: 1:15 coffee to water. Water at 200 degrees F / 93 degrees C.
Drip Machine
3 to 5 Tbsp ground coffee per 7 to 12 fl oz water. Standard paper or metal filter. Let the machine do its work.
French Press
3 to 5 Tbsp per 8 fl oz water. Steep 4 minutes. Press slowly. Pour immediately to stop extraction.
V60 / Pour Over
22g coffee, 330g water. Bloom 30 seconds, then pour in steady spirals. Total brew time 2:30 to 3:00.
Chemex
30g coffee, 450g water. Bloom 45 seconds, then pulse pour. Total brew time 3:30 to 4:00.
AeroPress
15g coffee, 230g water at 200 degrees F. Stir 10 seconds. Press at 1:30. Invert method works equally well.

What does "1:1 hot water extraction" mean?
The finely milled fruiting body is extracted for 3 hours at 90 to 100 degrees C, then evaporated and spray dried. The ratio is 1:1, meaning one unit of mushroom yields one unit of extract. Nothing from the original mushroom is discarded. This is not a concentrated extract. It is a complete one. A 1:1 extract preserves both soluble and insoluble beta-glucans, which gives the highest total beta-glucan count.
Why only two mushroom species?
Lion's Mane and Turkey Tail are the two with the strongest published research behind them for the claims we make: cognitive function and immune function. Products listing eight or twelve species usually do so at amounts too small to matter, hidden behind "proprietary blend" language. What are beta-glucans and why does the milligram figure matter?
Beta-(1,3)(1,6)-glucans are the bioactive compounds in functional mushrooms responsible for immune function support. The milligram figure tells you how much of the active compound you are actually getting. Most mushroom coffee brands do not publish this number. We do, and we back it with a public certificate of analysis tested by a third party lab (Altitude Consulting).
What does "100% fruiting body, zero mycelium fermented grain" mean?
Mycelium fermented grain (MFG) is the industry's transparency problem. It is starch grown on rice or oats, marketed as mushroom, with almost no beta-glucans. Fruiting body is the actual mushroom: the part that contains the beta-glucans, hericenones, erinacines, and other bioactive compounds shown in clinical research. We use 100% fruiting body extract. Zero grain substrate. Zero fillers.
How should I store the coffee?
Reseal the bag after each use. Store at room temperature away from direct sunlight. The one-way valve on the front of the bag lets CO2 escape without letting oxygen in. Ground coffee is best consumed within 30 days of opening.
